place the chicken skin side up on the smoker over indirect heat. smoke the chicken at 225 degrees f. for about 1 1/2 hours or until the internal temperature reaches 150-155 degrees f. to crisp the skin and finish cooking, crank the heat up to 400 degrees f to reverse sear the chicken.
