use a salt rub 1-2 days before smoking

  1. spatchcock the chicken.
  2. generously rub kosher salt all over the skin.
  3. refrigerate the chicken for 24-48 hours.
  4. rinse the chicken thoroughly.
  5. pat it dry.
  6. smoke on your pellet grill as normal.
