since creme anglaise contains eggs, it is important to cook it to a certain temperature. you should make sure you reach at least 74degc (165degf) to destroy a harmful enzyme (alpha-amylase) that is present in the eggs. for the perfect texture- creamy, smooth and slightly thick- aim for a temperature of about 82degc (180degf).
