for the cranberry studded mincemeat - makes about 600ml / 2 1/2 cups

  1. 1/4 cup ruby port.
  2. 1/2 cup soft dark brown sugar.
  3. 3 cups cranberries.
  4. 1 teaspoon ground cinnamon.
  5. 1 teaspoon ground ginger.
  6. 1/2 teaspoon ground cloves.
  7. 1/2 cup currants.
  8. 1/2 cup raisins.
