the garlic is a little trick for adding flavour as it infuses the pancetta with flavour. i usually add one clove of garlic to the pan when i cook the pancetta, then remove it before the pasta goes in. this way the garlic adds to the delicate flavour of the carbonara sauce without overwhelming it.
