for the vegan lemon layer:

  1. 1 1/3 cups white sugar.
  2. 6 tablespoons cornstarch.
  3. 1 1/3 cup plant-based milk (such as oat or soy)
  4. 1/2 cup lemon juice.
  5. 1/4 teaspoon turmeric (optional for colour)
  6. 1 teaspoon vanilla extract.
  7. 1 - 2 tablespoons powdered sugar (optional for dusting)
