white stock - chicken bones.
brown stock - beef or veal bones.
fumet - fish stock.
court bouillon - water containing herbs and spices (used for cooking fish)
glace - stock reduction.
remouillage - second stock.
jus - unthickened juice from a roast.
vegetable stock.
