the shape will also dictate how long they require in the oven.

  1. preheat the oven to 100degc, 80degc fan.
  2. bake for 1-2 hours, depending on shape, until set and firm. ...
  3. reduce oven temperature to 50degc, 40degc fan and allow meringues to dry out.
  4. once cooled, store in an airtight container until required.
