in a dish pour a good large glug of good olive oil, add the paprika and the juice of the lemon plus some finely chopped thyme and mix well. pour this over the pork fillet and rub into the meat well. pop this on a non stick baking tray and cook for 25-35 minutes depending on how you like your pork.
