the rule of thumb is one hour per pound for a pot roast. however, this assumes a middle-of-the-road oven temperature of 300degf (150degc). if you want to simmer at a low temp like 225degf (105degc), then add up to an hour more to the total above. for example, a 4-pound roast would take 4 1/2 to 5 hours.
