aillard (pronounced pie-yard) is an old-fashioned french culinary term that refers to a thin piece of meat made flat by pounding. the purpose of making a paillard is three-fold: the meat is tenderized, the thin even cut cooks fast and uniformly and it's a great way to get generous yields out of smaller portions.
