place lamb chops over indirect heat and close lid; cook, without turning, 8-10 minutes, or until the internal temperature reaches 110@f. move lamb chops to direct heat and sear 2 minutes per side, or until they're cooked to your liking, 135degf for medium-rare. transfer to platter; allow to rest 5 minutes before serving.
