steps

  1. saute mussels and shallots for 2 minutes, using a hot saute pan with half an ounce of oil.
  2. add roasted tomato and butter until melted.
  3. add white wine & salt and pepper to taste.
  4. cook until all mussels are open.
  5. 6 minute total cook time.
