cut small cubes out of the frozen block of cheese or shred it. keep the cheese in a microwave-safe bowl & let it rest at room temperature. cover it with a vented lid & melt it at low heat for 15 sec. stir it & melt it for an increment of 15 sec till the cheese melts into a smooth, creamy liquid.
