ingredients

  1. 500g red onions, finely sliced.
  2. 1kg fresh tomatoes, chopped.
  3. 4 garlic cloves, finely sliced.
  4. 8 - 12 fresh red chilli's, roughly chopped.
  5. a thumb-size piece of ginger, peeled and chopped.
  6. 250g brown sugar.
  7. 150ml red wine vinegar.
  8. 5 cardamom seeds.
