quick raspberry jam:

in a medium sized non-stick saucepan place together frozen raspberries, sugar and lemon juice and zest. cook it on a medium-high heat until it starts to boil, stirring occasionally. reduce the heat and let it cook for 15-20 minutes until it thickens.
