instructions

  1. boil a pot of water.
  2. turn off the heat.
  3. add rice noodles to the pot, or pour the boiling hot water over the noodles in a wide bowl, covering the noodles completely.
  4. swish the noodles around briefly to separate.
  5. soak the noodles for 6 to 10 minutes* until tender but still slightly firm and chewy.
