  1. in a large cast-iron or nonstick skillet over medium heat, heat oil. add garlic and cook until golden and fragrant, about 1 minute.
  2. add gizzards and season with salt. cook, stirring frequently, until gizzards turn opaque and edges turn golden, about 8 minutes.
  3. serve with rice, if desired.
