to make this apple pie just that little bit 'fancy' i like to decorate the top with strips of puff pastry, however you can certainly use a single piece of puff or shortcrust pastry for the top if you prefer. just make sure you pop a couple of small cuts into the pastry to help the steam escape during cooking.
