it's advised to avoid using virgin olive oil as it can't withstand high heat. note that olive oil can leave a thin carbonized layer on your non-stick pans. this residue build-up or layer can be difficult to scrub off, which can damage the pan. instead of olive oil, you can use peanut, sunflower, or coconut oils.
