How do you make Tom Kerridge roast potatoes?

whilst the potatoes are cooling, add the oil to a large roasting tray and pre heat the oven to 200degc. place the tray into the oven for the oil to heat up. once the oil is hot, carefully add the potatoes. put the tray back in to the oven and roast for a good 25 minutes before turning.
