you'll want to use about one tablespoon of filling for each ravioli; if you're comfortable eyeballing the amount, you can use a pastry bag (or a ziplock bag with one corner snipped off) since it's a little faster and neater. otherwise, just grab a measuring spoon and keep it on hand.
