pour the double cream into a heat-proof bowl and add to it the chocolate broken into pieces.
place over a bowl of simmering water, making sure the bowl does not touch the water.
leave the chocolate to melt, then add the butter and golden syrup and stir well until the butter has melted and the sauce is smooth and silky.
