pudding rice or risotto rice is just short-grain rice that cooks down nicely in a pudding. paella rice will give you a slightly different result but i'm sure it would be fine. this delia recipe is one i've used before. yeah bought it ages ago thinking i'd picked up risotto rice, it's the second time i've done it!
