1. 250 g plain flour.
2. a small pinch of salt.
3. 1 tablespoon of caster sugar (for sweet pancakes, if you're adding sweet toppings it's not really essential)
4. 3 large eggs.
5. 1 tbsp sunflower, vegetable oil or melted butter.
6. 500 ml milk.
7. about 25g butter, for the pan.
