place artichokes in pot, flat bottom down, then fill the pot until water is about half way up the artichokes. add lemon slices to water. bring water to a boil, lower to a simmer and place lid on pot. small artichokes will cook in about 40 minutes, medium 50-60 minutes, large 60-70 minutes.
